5-Grain Scones

Scones

Ingredients:

1/2 Cups Light Sift Spelt Flour

1/2 Cups Buckwheat Flour

1 Cups Whole Wheat Flour

1/2 Cups Corn Flour(Corn Meal)

1/2 Cups Teft Flour

4 Tsp Baking Powder

1/2 Tsp Bicarbonate Soda

1/2 Tsp Sea Salt

1/4 Cup Sugar

50g Chilled Butter

1/4 Cup Cream

1/3 Cup Milk

Jam

Prepare:

1. Preheat oven 425*F and place rack in the top of the oven. Line a slide tray with wax paper.

2.Sift flours together with baking powder and baking soda. Stir in sea salt and sugar.

Coarsely grate butter over the top and use your hands to rub it in: the texture should be coarse and granular. Make well in the center and add the cream and milk to this, then mix together thoroughly

with a butter knife. If it's very dry and crumbly you can add some more milk.

3.Turn dough out onto a clean counter and form into a 1 inch thick disc. Use a knife and cut into triangles. arrange on tray with sides touching. Brush the top with milk and bake for 12-15 minutes. Serve with jam or a glaze.
